Hello my loves, how are you!?
One of my goals this year is to have more and more vegan days, aiming for one a week, which I’ll be honest, hasn’t really happened so far however, last Saturday I did have a vegan day, where I tried different dishes to what I’d have normally, and had some fun cooking up meals for myself.
I’m loving cooking recently and serving up different vegan dishes is definitely a hobby of mine, on previous vegan days I haven’t really experimented or got too crafty with my meals, but now I’m getting into it more and more so I thought I’d share with you another ‘what I eat in a day vegan edition’.

Breakfast
Tesco Free From Choco Snaps with Alpro Coconut Milk
My go to vegan breakfast, I honestly find breakfast to be the easiest meal of the day for eating vegan. Vegan cereal and vegan milk? Simples. I love these Choco Snaps from Tesco, they’re just like Coco Pops except maybe just a little less chocolatey? But still totally delicious, I 100% recommend. Coconut Milk is my favourite vegan milk but if I’m honest, they’re all pretty good and I don’t think there’s too much difference between them.
Lunch
Singapore Noodles with Carrot, Sweetcorn and Cucumber


So according to Cordelia, Singapore noodles aren’t actually a thing in Singapore, LOL, but we sell them here in the UK. Makes sense! Anyway, I bought these noodles from Tesco’s because they didn’t have my usual vegan noodles and I pretty much created a vegetable stir fry. This dish was maybe a 6 out of 10, but the noodles weren’t my favourite as they had a little spice to them which is fine, but I prefer a plain noodle which I can add pesto to. I probably wouldn’t repurchase the noodles, but I would have this dish again and just change the noodles to my favourite vegan protein noodles, with a pesto sauce finish.
Dinner
Pasta with Lemon Tofoo, Pesto, Broccoli, Sweetcorn and Greens
This was my first time trying Tofoo and I didn’t love it as much as I hoped. I don’t think my cooking was perfect being that it was my first time, so I would be willing to try it again, however I just feel the Tofoo didn’t add anything to my meal. I probably would have enjoyed it just the same if not more had I not bothered with it and just had the pasta, pesto and veg.
Snacks
Lots of fruit (kinda) – Raisins, a banana and oh, wait, is that it? Okay, only two pieces of fruit LOL. I also had Lentil Chips in the Sea Salt flavour which are yummy – I just love vegan crisps they have such a great texture to them, and these ones are so nice and crunchy! Plus I had a vegan chocolate bar from Tesco’s free from range! This tastes like advent calendar chocolate and I’d rate it a strong 7/8 out of 10. YUM!


Drinks
Water, Orange Juice & Coke.

Ooo, I love these kinds of posts! My favourite vegan thing is definitely tau gua (very firm tofu) because they are such a great substitute for meat!!!!

Loved reading what you ate! That cereal looks SO yummy! As does that pasta! I have had so many great yummy vegan meals! One of my favorites was buffalo cheese balls, from Blossom. They did NOT taste vegan at all. SO yummy! Thank for sharing sweets! ❤

those choco snaps look sooo good! it’s too bad i don’t like coconut haha, the flavor is not my thing LOL. i have been using rice milk instead, i like the flavor of that better and i use it for all kinds of recipes that call for milk lol. that can be done with coconut milk too but like i said, dont’ like the flavor xD
those singapore noodles sound like something i would eat, sometimes alex makes spicy noodles for us and they are very flavorful and enjoyable to eat the way he makes them.
the pasta looks sooo good! i like cooking tofu but only in certain ways. it is very hard to add flavor to it but there are some recipes ive found in which is super easy to add loads of flavor and still make it a joy to eat. one of my favorite ways is honey sriracha but it is spicy lol
the snacks look amazing as well!! i’d love to try more vegan chocolate bars, i find them hard to find around here in the stores near me unfortunately 😦 i would love to try those lentil chips too, they sound interesting!

I’d love to try that Coco Pops cereal! & that’s so silly that Singapore Noodles are named that way when they aren’t even sold in the country! I know that fortune cookies weren’t created in China, either, lol. Tesco seems to have a great line of vegan foods/snacks. 🙂
